Have you ever wondered why cheese is yellow or whether its color occurs naturally? The natural color of cheese actually varies from pure white to medium yellow, depending on the amount of beta-carotene in the milk. This beta-carotene, in turn, depends on whether the cow was fed fresh grass or hay.
